Eric Skokan does it all. At his Black Cat Farm Table Bistro in downtown Boulder, Eric presents seasonal menus, centered on what the land has to offer, every night of the week. He used to keep a garden and a flock of chickens in his backyard to supply the restaurant. When the backyard garden could not keep up with the kitchen's needs, Eric started Black Cat Organic Farm just outside of Niwot. At the farm, Eric and his team grow more than 250 heirloom cultivars of vegetables, fruits and herbs. Their daily harvest inspires the restaurant's ever-changing menu. The farm's CSA shares are quick to sell out, as are the baskets of just-picked, tender greens and vegetables Eric brings to the Boulder County Farmers' Market. Eric is deeply committed to his community, providing organic vegetables to the Community Food Share program, cooking fundraiser dinners for local non-profits, and participating in roundtable discussions with students of sustainable agriculture.
